Whole 30 Baked Chicken
Meal prep.....all my clients are equally intimidated by this process!
Here is a quick easy recipe for prepping delicious baked chicken!
Ingredients:
3 chicken leg quarters
1/4C Chicken stock
1 Onion
1 clove of Elephant Garlic
1 chunk of ginger
Oven safe pan
1 tbsp Coconut oil
1 Tbsp salt & pepper
Directions:
Preheat oven to 400 degrees.
Heat pan over medium heat with coconut oil.
Chop onion, garlic, and ginger in large chunks.
Place chicken skin up in pan and spread ginger, garlic, and onion evenly in pan.
Place in oven and cook skin side up for 20 minutes.
After 20 minutes flip chicken skin side down and cook the remainder of time.
After 45 minutes flip chicken again and brown for 10-15 minutes!
